About Budonoki:

Named one of Eater's 2024 Best New Restaurants in America, Budonoki is an Izakaya/Japanese restaurant concept created by seasoned industry veterans with diverse experience and top-of-the-line pedigree. We are seeking a talented and driven Executive Sous Chef to join our leadership team. The ideal candidate should have a deep passion for Japanese food & beverage with an izakaya-inspired approach, and the experience to lead a high-performing kitchen alongside our Executive Chef.

We are searching for an EXECUTIVE SOUS CHEF:

Candidates must possess the following:

  • A can-do attitude and leadership presence that sets the tone for the entire kitchen — leading by example with passion, humility, and dedication where no task is beneath you.
  • 5+ years of progressive culinary experience, with at least 2 years in a sous chef or senior leadership role in a high-volume, chef-driven environment (Japanese/Izakaya experience strongly preferred).
  • Demonstrated ability to lead, train, and mentor a team of line cooks and prep cooks, fostering a positive, respectful, and high-performance kitchen culture.
  • Expert knowledge of Japanese culinary techniques, ingredients, and flavor profiles, with the ability to execute at the highest level across all stations.
  • Proven experience partnering with the Executive Chef on menu development, specials, recipe testing, and seasonal program planning.
  • Strong operational skills including inventory management, ordering, vendor relationships, labor scheduling, food cost control, and hitting budget targets.
  • Deeply committed to safety, sanitation, and good environmental practices in the workplace; able to uphold and enforce ServSafe and local health department standards at all times.
  • Flexible hours are required (prep shifts, nights, weekends, holidays) or as agreed with your hiring manager. Must be able to step in and run the kitchen confidently in the Executive Chef's absence.
  • Uphold and continuously elevate standards & systems across all daily food preparation and service execution.
  • Execute consistently with all food prep activities before, during, and after service — including leading pre-shift meetings, expediting the pass, and ensuring every plate that leaves the kitchen meets Budonoki's standards.
  • Oversee kitchen tasks including opening & closing duties, prep-list execution, station set-up and maintenance, deep cleaning schedules, and equipment upkeep.
